Zucchini pancakes served with a spicy marinara dipping sauce.
Side is raw veggies (carrots and cauliflower) with homemade
lemon garlic hummus. And pickles.
Simple but one of our favorite meals.

I just got some beautiful zucchini and yellow squash yesterday.
I will cook GF squash fritters with some of them today. I will
have the fritters with coconut yogurt "Ranch" sauce and a side
of relish made from diced English cucumber, red bell pepper,
carrot, and fresh Italian parsley and basil with and olive oil
and red wine vinaigrette. For desert, fresh green grapes.
I think we eat a lot of similar foods. :)

Last night I cooked a pork roast because it was on sale. Served
with rosemary-garlic roast potatoes, steamed broccoli and peach
salsa.
I mention the salsa because normally I just serve applesauce or
some apple-y thing with pork roast, but last time I didn't have
applesauce and I did have leftover pineapple salsa and it was a
*fabulous* add. But this time I forgot to buy pineapple salsa,
and I had a bunch of peaches I picked from a local tree so I
winged it.
God, it was good. I'm having leftovers right now.

Roasting a chicken tonight, mac & cheese with vegetables as a
side.
We'll eat the wings and leg quarters tonight, then make taco
casseroles with the breasts for Tuesday and Wednesday.

I feel like Sandra Lee (I think that's her name), all I'm making
lately is sorta from scratch but not really.
Made a "lasagna" that was no boil noodles, layered with crumbled
ground turkey, a jar of alfredo, fresh spinach and lots of fresh
basil and oregano. Layer of provolone on top. It came out soooo
good.

Tonight was another tomato salad :D Tomatoes, cucumbers, green
onion, cilantro, basil, ginger, garlic, roasted tofu, sesame
oil, rice vinegar, golden seasoning sauce, coconut aminos ...
