My aero garden is being taken over by basil and dill, so I think
I'll do a chicken tonight to let the other herbs have a crack at
the light.
Next time I need to remember to let the slower germinators have
a head start.

What's the marinade? I'm not really a tofu fan but if the
marinade is spicy enough and also kind of thick and sticky it
can work.
OK that is a lie, I will eat it but I'd basically never choose
to eat it on purpose.

I eat a decent amount of tofu and there are two things that I
think make it extra delicious. 1) Freeze it solid, then thaw it
before you use it - it takes about a day to thaw in the fridge.
It changes the texture a bit, but makes it really easy to
squeeze out the liquid so any sauce/marinades you add really
penetrate. I like the changed texture, too. 2) If you are going
for crispy, shake it in potato starch - way crispier than flour
or corn starch.
Polenta taco bowls for me tonight: polenta, seasoned beef (still
deciding real ground beef or try the ground Impossible burger),
avocado, roasted tomatoes, olives, onions, cilantro, cotija
cheese

Freezing is actually step three in the favorite roasted tofu
method I mentioned in the other thread :P
Dice, roast, then freeze firm tofu — preferably not the water
packed or shelf stable stuff. Then I add tofu — direct from the
freezer — into stir fries, soups, etc.

I finally made the paella I've been wanting to make for a while
now. I combined two recipes - one I'd made decades ago and
another I found on the web. It was delicious, but the rice
never developed the "crust" on the bottom that it's supposed to.
I admit it was challenging. I had to order Bomba rice from the
internet, my paella pan that I bought myself before the pandemic
is large and so I used 3 of the burners on my stove and kept
moving the pan so different sections woud be above the burners,
hoping the rice would cook evenly.
We will eat the leftovers tomorrow, I'll cook some chicken to
add to it since we ate the seafood tonight.
