I love this one. I know you said rice, but I think you could
just do the pork chop part of the recipe and skip the potatoes.

This looks really good! I overcooked the pork chops and they
were dry but I would try this. Scalloped potatoes are so good.
I ended up doing a parmesan risotto and Rick's vegetable medley
ended up being too spicy for anyone but him to eat!
We started a new show last night called Fast Foodies and the
first challenge was to make a Chicago hot dog as good as
Portillos. Joel McHale was the guest and he is so fun. So
tonight we are having fancy hot dogs for dinner!

I like the Italian beef and the hot dogs at Portillos but the
underrated food there is the chopped salad.
Romaine, iceberg, red cabbage, chicken, ditalini pasta, bacon,
tomatoes, blue cheese, and green onion. It’s tossed with a house
dressing.
I used to make a knock off version at home but it wasn’t quite
the same thing.

I like chopped salad. I even like it with iceberg, sue me.
I'm on a budget lately and now I'm sick of eating chicken I
cooked every single day so I'm going to the little
hole-in-the-wall Middle Eastern Takeout place because
(a) very cheap
(b) their babaganouj is to die for
Sometimes I forget places like this because when we go out we go
to places where I can sit at the bar and this tiny little place
is takeout only.
Bonus: prosecco at my house about six fold cheaper!

I found a refurbished Vitamix on Amazon and decided to spring
for it. After seeing I could make salad dressings and dips I
ordered a cookbook with 500 Vitamix recipes. Will there be
babaganoush? YEAH.
Rick does not realize I have entered a new lifestyle phase.
Haven't had one this big since I bought the peloton.
That Portillos chopped salad sounds amazing. I have no idea what
sides we are having with these hot dogs but I now want a chopped
salad heavy on bacon, blue cheese and vinaigrette.
I can't wait to watch the next episode of Fast Foodies. What
will I crave next? We also started Reservation Dogs which has
been awesome.

I am way too lazy to pour soup into a blender. I just
stick-blender it into submission right in the Dutch oven.

Love butternut squash in any form.
Tonight I’m making butternut squash risotto. It will also have
sautéed apple, sage, thyme and onion. And I’ll add a bit of
crispy proscuitto on top as it is done.
It’s still hot hot hot here, but Im feeling in the mood for
fall/winter flavors. Comfort food.
