I would try Queenie's recipe but Rick hates mustard.
I'm a fan of putting beer in the recipe, maybe the kids will go

My kids are eating a huge snack after school and then just a
banana or cereal for dinner. I don’t hate this.
We eat a big breakfast together and that has been going well.

I would love some after school snack ideas. So far we've been
doing bananas and.... bananas.
I'm going to make some parm risotto to go with the pork chops
and Rick is going to throw all the vegetables we have in the
freezer in a pan with some hatch chiles and call it a "medley"
I have got to do better at the store on Saturdays. It is
Wednesday for crying out loud.

I looooooove a Baby Bell. Love love love. I recently found these
little Fontina snacking cheeses in the cheese case which are
like *sophisticated* baby bells. I just finished off our
pistachios as a snack so we're kind of roommates now.
This is how much I love risotto: I've made it so many times I
cook it from memory. Nigella Lawson has a lemon risotto I used
to make a lot and is kind of my "base recipe" when I take out
the lemon. There is something very soothing to me of stirring a
nice pot of risotto while yelling at the kids from the kitchen
stove.

I love lemon in anything.
I also made some no bake oat/peanut butter/chocolate chip energy
balls because I thought they were small but with a bunch of
calories so the kids would eat them at lunch and be fuller
longer, but both kids rejected it.
Jojo’s nanny share has 4 kids and each family contributes lunch
one day a week and Friday they Uber Eats fast food. It’s pretty
nice to only have to deal with lunch one day a week for her.

Jojo nearly always has something she will eat there because she
will nearly always eat fruit. It hasn’t really expanded her
eating habits, but everybody else said their kids eat more when
somebody else brings it, which feels right.

I will tell you that this was true of my boys in their mid to
late teens. I try to introduce it to them? Nah. Not having any
of that. My mom takes them for burgers? Goat cheese on the
burger? I'll try it. Cold sliced duck breast for a snack? I'll
try it. And so on and so forth.

I love this one. I know you said rice, but I think you could
just do the pork chop part of the recipe and skip the potatoes.
(It occurs to me that depending on your time zone, this might be
too late.)

Mahi-mahi , homemade rolls, and summer vegetable tian… so pretty
in the pic, anyway! Great way to use up squash and tomatoes!
