Someday I am going to have freshly caught local shrimp and then
I will learn what all the fuss is about.
Here it will be grilled chicken in a lemon/herb marinade and
probably salad.
I have become rather too accustomed to having a glass of wine on
the deck with my dinner even on weeknights so I'll probably go
with seltzer.

My monthly grocery pick up is tomorrow. Tonight's dinner will
be whatever I can put together with what is left from last
month's grocery pick up. I always have farm eggs, so scrambled
eggs with leftover quinoa and left over rosemary and garlic
infused olive oil roasted carrots. Or gluten free pecan and
cardamom pancakes with maple syrup. I haven't decided yet.

Quiche tonight with the last of a ham from the freezer, chard
from the garden and provolone, plus a simple salad. Leftover
lasagna tomorrow.
When I was walking my dog yesterday and noticed all the fat
squirrels carrying walnuts around, I realized I'm doing a
version of the same thing. Bulking up for the winter. Sigh...
I do not need to bulk up.

Just finished dinner at this end of the country. :)
Roasted vegetables with Mexican spices, put into a soft taco
with rice and cheeses. Salsa, sour cream and avocado as
optional toppings. Turkey for those who want to add it.
Dessert? What the Duchess of Cornwall approves: homemade
Victoria Sponge, with a layer of nutella and freshly whipped
unsweetened cream. (Someone had good news today, so a minor
little celebration).

I have boneless pork chops defrosting and I need IDEAS! Anyone
have a recipe they love? Not too exotic as I have extremely
boring eaters for children.
I have spinach and rice for sides. Maybe I could pull off a
risotto? Despite spending a small fortune at the grocery store
last weekend, we have no food. :)

I haven't tried this but it looks easy and good. Balsamic
marinades are nice because they caramelize well.

I don’t have an actual recipe. But the way I do pork chops is a
salt, pepper, garlic powder, and onion powder dry brine. I’ve
found that pork chops really benefit from being removed from the
package, blotted dry, and a dry brine. Then right before I cook
them I add a small amount of brown sugar.
Then I pan dry them in olive oil, remove to rest under tented
foil, and use the same pan to sauté onions and apples. Deglaze
the onions and apples with almost any liquid, but beer is really
really good. Most of the alcohol burns off for the kids. My kids
refuse to eat the sauce anyway, maybe because it’s made out of
beer? Unclear.
I’ve also used stock with a splash of apple cider vinegar or
apple cider.

Running down to throw them in a brine right now!
I would try Queenie's recipe but Rick hates mustard.
I'm a fan of putting beer in the recipe, maybe the kids will go
to bed early.

Ha!
My kids are eating a huge snack after school and then just a
banana or cereal for dinner. I don’t hate this.
We eat a big breakfast together and that has been going well.

Homemade calzones/pizza nite here. Probably more calzones than
pizza. Pepperoni all the way!!!
That said, when I asked my husband how the pizza dough is doing,
he told me it was loafing around.
And when I visually protested the bad dad joke, he laughed and
said "thanks, I kneaded that". 🤦‍♀️
