Maya - I love these shrimp taco ideas! I will definitely make a
fresh pico - maybe over the lunch hour so it can sit around and
marinate for a few hours.
Just the adults having the shrimp tacos because the kids are
picky babies about seafood.
My next question - I have 2 pounds of roasted hatch chiles just
waiting for some yummy recipe. Any ideas? I feel like one pound
should be chile rellenos but what to do with the rest?

Hatch Chilis - if they were fresh, not yet roasted, I would
stuff and bake them.
But already roasted, hmm…. Chop one up and mix it in the pico
for a little extra flavor in there.
Diced and mixed into an omelet. Diced and added as a topping
on some type of potato?
Make a spicy queso for a side dish to the tacos? Or if you are
doing any rice or beans with the tacos, mixed into either of
those.
I’m thinking of mixing them into black beans and now I’m getting
hungry lol

An easy one is lightly brown chicken breast or thighs that have
been pounded to an even thickness.
Mix sour cream, green chiles, jack cheese and smear over
chicken. Bake until bubbly. Serve with avocado slices.
What I am going to try soon is a different way to make tamales.
I saw a recipe on Mj's Kitchen website. She mixes the masa and
chicken and cheese all together then smears the mixture on the
corn husks and rolls. Saves a step.
She also has a recipe for chicken with pecan sauce. I also make
a green chili sauce with just chicken broth, onion, garlic and
diced chilis. I freeze it to use for huevos rancheros or a
quick enchilada sauce.
Roasted green chilies....means fall is coming!

4Sure that is so interesting about the pecan sauce - my favorite
chile relleno is at Matt's in Dallas and they serve them with
sour cream, chopped pecans and raisins on top. It sounds weird
but it's SO GOOD! That is one of the things I plan to copy/make.
I got the chiles already roasted from Wegman's so I could freeze
them and have hatch chile fun all year long. Or at least for a
couple of months. :) I can't say I really had a plan. Maybe I
will pull a couple out a week to do fun things with.
Rick makes an amazing omelet - definitely using them for that.
And some queso to pair with college football.

Big day today...
It is National Linguini Day
From the Liguria region of Italy, linguine means “little
tongues” in Italian. Made from durum semolina flour, linguine is
one of the world’s oldest kinds of pasta. Fettuccine and
linguine both developed around 400 years ago. While both are
thin, flat noodles, linguine is narrower and more elliptical in
shape. As a result, linguine produces a more delicate pasta. To
avoid breakage, pair linguine with thinner, lighter sauces.
Good stuff for sure. I'm a bigger fan of fettuccine but this is
good too.
National Double Cheeseburger Day
I really can only do the double if we are dealing with smashed
burger style patties. American cheese may seem boring but it
just goes with a burger.
National Cheese Toast Day
It might surprise many to know the treat was created by Del
Johnson. In 1958, he opened his first Sizzler restaurant. It was
an instant success. And although the recipe changed a bit over
the years, the concept of Cheese Toast hasn’t.
What? No one thought to melt cheese on toast until old Del did
it in 58? ???

Gosh I miss pasta. But we've been cutting carbs for so long now
that if I eat a plate of pasta my body revolts: "What the bloody
hell have you done to me? I will now go into a temporary food
coma."
My burgers are too big to eat double but maybe I'll just do
singles today. The boys prefer American cheese. Mr. Q likes a
mild provolone. I like to switch it up but my favorite is this
thing called Yancey's steakhouse onion that's probably just a
really gross American cheese with onion bits in it. Really good
on a burger, and not much anywhere else. Well, maybe on a roast
beef sandwich.
Cheese toast: this is what I grew up with. When my mom made a
grilled cheese sandwich this is what she served. I had no idea
that there was any other kind until about halfway through
elementary school.

Have you tried the boxed Hearts of Palm pasta from Trader Joe's?
It is remarkably like pasta, without the calories. It is so nice
and light, I think I actually prefer it!

Yom Kippur starts in, like, an hour. We'll be loading up on
goodies from the halal place down the street to stuff ourselves
silly right before sundown.
