I dunno if I'd say more refined. I tend to like comfort food of
pretty much all cuisines. But there are just specific
ingredients I don't like/can't take/have.
Italian is great. Pastitsio (greek) is great. I'm all about
pasta and cheese and potatoes. I can have like 9800 variations
of that. Shepherd's Pie (okay, okay, COTTAGE Pie)... almost
every day of the week I will be up for this. Love
teriyaki/tempura but can't have that anymore.
Yesterday I was bemoaning my desire for rice-a-roni and
pasta-roni that I can't have anymore.
And it's pretty safe to feed me almost anything as long as it
doesn't contain seafood/cilantro/soy. Or highly acidic foods
(except for pickles, I make exceptions for pickles), or high
tyramine foods. I understand that I now sound ridiculous. But
between taste buds/ulcer/silent migraines, I balance my diet
cheats where I can.

Linguine with red clam sauce. For the first time since my
husband became pretty much bedridden and unable to make the clam
sauce. I'm slowly learning his recipes.

Thai wings from Madame Mam's, with a roasted brussels sprout
appetizer as my nod to health, while we enjoy Godzilla vs The
Thing, then Godzilla vs Mothra.

We are heading out tomorrow morning in our camper van for a few
days in a nearby state park.
So tonight it was all about cleaning out the produce that we're
not taking. But I was too tired to make the Thai eggplant with
chicken I'd planned.
So we had roasted vegetables (two skinny Japanese eggplants, a
red pepper and a green pepper, a few cherry tomatoes and a bunch
of cauliflower.)
I made a simple marinade for a single chicken breast (old recipe
from the NYT cookbook) with a plain yogurt base, mustard, cumin,
salt, lemon, garlic, curry powder, cardamon. And made Hummus.
The best part, in my opinion, was the eggplant. I sliced it in
fairly slender slices, put on a small amount of olive oil,
coarse sea salt and pepper and baked at 375 degrees until
browned., flipping them around after a bit. Absolutely
delicious!

This recipe for cilantro lime chicken was really bland. Do not
recommend.

I don't know why but the Asian seasonings just work better.
Tonight we are doing tacos - beef for the kids, shrimp for me
and Rick. And I have a recipe for slow cooker "refried" beans
that everyone loves. Rick referred to it once as gruel so that's
what we call it. Tacos and Gruel!

We marinate the shrimp in margarita mix, as we are all adults,
we add some tequila, but the tequila is not necessary.
Then if the shrimp are large, and shell on, we grill them. If
not quick sauté.
Served with some type of slaw, either mango or pineapple, and a
lime crema to drizzle.
Sometimes I’ll make up a fresh pico as well. Sometimes I’ll mix
in chopped candied jalapeños to the slaw for a little sweet and
heat.
That’s it, we keep it simple.

Vegan fried rice with red bell peppers, carrots, baby spinach,
edamame, fresh ginger, chives, egg, and (Yellowbird "Sriracha",
tamari sauce, nutritional yeast, maple syrup, ginger, and garlic
infused olive oil marinated) baked tofu, and jasmine rice
sauteed with peanut oil and a bit of toasted sesame oil topped
with white and black sesame seeds. Blueberries, raspberries,
and strawberries with coconut milk yogurt for dessert.
