What's for dinner?

We are having some lasagna BP made a few weeks back and froze.
Does that do anything to the pasta?

I think lasagna is something that gets better with time, so I
wouldn't be worried about the freezer. Grilled veggie sandwiches
for me tonight!

Yum. I winged a corn salad last night. Sauteed corn, poblanos,
onions and threw in some diced tomatoes at the end. It was
really good.

Did she freeze it unbaked, or baked?
For me, I find a slight difference in the baked-then-frozen
texture, but not enough to make me avoid doing that for lunch
food.
For unbaked-then-frozen, sorry, I don't have enough experience
with that to say.

Corn salad always seems to come out great no matter what I do,
which is some version of:
Grill corn
Grill some other veggies, must include peppers (some hot) and
onions
Don't forget the squeeze of lime and a few fresh herbs
Sometimes I add orzo. Sometimes I toss in roasted cherry
tomatoes. Sometimes it's a real "clean out the fridge" thing.
It's always delicious, and hardly anybody asks for hot sauce.

I make a bunch of lasagna this time of year with CSA/garden veg,
then freeze unbaked for easy winter meals. It's fabulous. But, I
far prefer lasagna that's sat a bit — either baked, then eat the
next day, or frozen, then cooked later — the flavors meld so
well.

We're having gazpacho for dinner :P
I've got 2 bushels of tomatoes in some form or another in the
kitchen, plus a bunch of cucumbers, eggplant, 10 gallons of
chilis, sweet peppers, and a few dozen ears of corn ;D Tomorrow
afternoon/this weekend will be prepping meals for the freezer,
and canning corn relish and spicy marinara. I'll get the
fermented chilis started tonight.

Is it me or has corn started to go out of season? The last
couple of batches we got were not great.

After a period of time of nursing my stomach with easy to digest
and mostly bland foods (a well worn pattern), my stomach is
feeling much better now, which means I want food! Tonight I
will get out my castiron grill pan and cook an an Impossible
burger to have on a toasted gluten free bun with fresh veggie
fixings. I may swing for the fences and add a little barbecue
sauce and some plantain chips on the side. A rare "junk food"
day for me. I don't get to do this often. I get excited. :)
