       THE Definitive Cornbread Recipe

       Start preheating the oven to 425 F.  Put 2 Tbls shortening (or
       bacon fat, if you have any) into a medium-sized iron skillet and
       put that in the oven to melt.
       While the oven's heating up, beat 2 eggs and 1 tsp salt together
       with a fork.  Add 1 cup milk, 2 heaping tsp baking powder, 1/3
       cup white flour, and 1 1/4 cups cornmeal, stirring gently.  Like
       when you make muffins, you want it mixed but not smooth.  (And
       use stone-ground cornmeal, if you can find it; it makes much
       better cornbread.)
       The shortening ought to be melted by now.  Pour most of the fat
       into the cornbread mixture, give it a stir, and pour the batter
       back into the hot pan.  Bake for 25 minutes.  Wonderful stuff!
       And, of course, if you feel so inclined, you can cut up an onion
       and cook it soft in a little butter or bacon grease, and add
       that to the batter, or you can cut up a few canned jalapenos and
       add those, or grate up some sharp cheddar cheese and add that,
       or do ALL of the above; it's your cornbread and you fix it the
       way you like it.
