Vegan mug cake?

Someone posted a recipe for that before Thanksgiving and I'm
hoping they could repost it here.

No problem:
1⁄4 cup flour
1⁄4 cup sugar
1 tablespoon unsweetened cocoa powder
1⁄4 teaspoon baking soda
1⁄8 teaspoon salt
1 tablespoon vegetable oil
3⁄4 teaspoon white vinegar
1⁄4 teaspoon vanilla
1⁄4 cup water
Directions
Stir together all the dry ingredients in a large coffee cup.
Add wet ingredients and mix well with a fork.
Microwave on 50% power for 3 minutes. (I think most
microwaves are
1500 watts, so that's about the same as 750 watts for three
minutes.)

And you can use gluten free flour, right?

Yes, almond flour definitely works. I haven't tried it with
others.

I have made gluten free mug cakes with Bob's Red Mill 1:1 gluten
free flour and with coconut flour. Find a coconut flour
specific recipe if you try that one because the proportions are
probably a bit different. Also, letting the batter sit for
10-15 minutes before cooking improves the results (same for
coconut flour pancakes). I prefer Bob's Red Mill 1:1 flour for
mug cakes.

I've had excellent luck with the various cup-for-cup GF baking
mixes.
If you haven't tried the Krusteaz GF brownie mix I recommend
that you do so immediately. Best damned brownies I've ever had.

Mr Q can eat those, but he has no dietary restrictions. My
celiac friends eat them without ill effects.

Is he off the low/no carb restrictions? (Gluten doesnt bother
me either, but I do have to monitor carbs which makes stuff like
awesome brownies tough to negotiate. So just wondered if he ate
them too or just your kids.)
