Festivus prep

I have decided to participate in the Festivus party at my
workplace next Friday. Everyone attending is vaccinated and
boosted and we are dining in the shop (giant room with an HVAC).
I want to bring a three sisters salad. I like this recipe but
I am not sure if it makes enough. We usually have about a dozen
people. We usually have far too much food. I think I should
just make one recipe and tell myself it is okay to go home with
an empty bowl. In fact, that is the goal. I will leave the
queso fresco on the side so if there are leftovers I can eat the
rest. I may add something but I want to taste it as is first.
What do you think? Is it too healthy for Festivus? It covers
the person with celiac disease and the vegans and it has a short
list of ingredients to put on a card next to the bowl.

I think it looks fantastic. (When everybody else brings their
buckets of gluey mac&cheese, this will be a fab alternative,
hah.)
I wouldnt bother to increase the recipe: with 12ish ppl, there
will be a lot of dishes to choose from. Even if you run out,
that's fine: no one dish has to feed every person an
entree-sized portion.

I think it's great. For omnivores and GF, it makes a great side,
and for vegans it offers some substance that is often missing at
potlucks. Very inclusive, as well as delicious. (And I also
agree with Muskrat that it is a fresh alternative to some of the
overly rich offerings, too.)

I made it tonight (or at least as close as I could). I used
frozen corn and only roasted the corn for about 10 minutes. When
I do it again, I'll roast the squash for less time (it was in
about 25 minutes) so it's not so mushy. And wild rice is insane.
Close to an hour just for rice? Not next time. I'll use white
rice or maybe basmati.
One thing that could be more a matter of taste than anything
else: it's very sweet, and I used a full teaspoon of chili
powder. I'll double that.
Overall, it's a wonderful recipe.

I made the salad. It is delicious! I modified the recipe just
a bit. Chili powder usually has garlic powder and onion powder
in it. I use ground chili peppers with none of that and per
serving it brings the heat by comparison, so I stayed with the
3/4 tsp of chili. I used 1 tbsp garlic infused olive oil and I
tsp extra virgin olive oil to give it a hint of garlic. I used
forbidden rice because that was the type of wild rice I could
find. The only thing I added was about 2 tbsp fresh oregano
leaves. It needed something green. I am glad I ate a good
lunch before I started cooking or I would have wanted to eat
some!
After a brief break I'm making 2 key lime pies to give to the
two people here who were references for me on my grad school
application. The third is person is out of state.

Festivus, for the rest of us:
It was fun and I was very happy to see some faces I had not seen
in a long time. The usual party organizer, well, she is the
party, was out with a sinus infection. It would have been more
festive had she been there, but I will see her next week,
hopefully. The salad was a hit. I have enough for one meal for
myself left. One person I was eager to see was newly in a cast.
Fernando was causing trouble and she tried to get him under
control somehow (she didn't explain). She has a fractured left
wrist and left ring finger. Fernando is an orphaned goat she
raised. I told her he was trouble three years ago when she was
bringing him to work because he was still taking bottles. She
is a (right handed) tough as nails lady who has a small farm and
lives alone. She is okay. Shame on you Fernando!

Glad that it was fun, and also that the salad was a hit! I'll
definitely do the salad with some kind of rice. The queso
fresco just makes it sing, doesn't it? :)
