       Stout, lentil, and winter vegetable pie (vegan)

       This started out as a biscuit-topped stew based on this recipe

       and evolved
       to become a double crust pie.
       Combine 2 cups of sautéed vegetables (onion, garlic, parsnip,
       cabbage/kale, winter gourds, turnips, potatoes) and 1 cup of
       cooked lentils. Fold in a vegetable gravy (olive oil, flour,
       mushroom/vegetable broth, soy sauce, thyme, bay leaves), and set
       aside to cool.
       Make a vegan-butter/shortening based double-crust like this from
       Serious Eats

       Roll out the
       two crusts, form, and fill (I never pre-bake). Brush the top
       crust with oil or melted shortening. Bake at 400 (5 minutes)
       then 350 until browned.
