Mexican skillet bake

I'm stuck in this crappy short term apartment with a teeny tiny
galley kitchen for another 4 months so I've been experimenting
with one dish recipes since there's like ZERO prep space and the
littlest stove top I've ever seen. This one was super easy.
2 cups shredded pre cooked chicken
1 cup salsa
1 cup uncooked rice
2 cups chicken broth
1 T chili powder
1 can black beans
All dumped in one pot and simmered for 15 minutes then topped
with shredded cheese and minced green onions.

I travel with a rice cooker and this sounds perfect.
Two questions: conventional rice? Rinse the beans?

I would eat the hell out of that.
I wonder how it would work with cauliflower rice?

I used the 10 min rice and rinsed the beans. Had to add a little
bit more broth than the recipe called for so just keep an eye on
that. And yeah, I ate a lot of it... :o

I use a similar recipe to make casseroles, and cauli rice does
very nicely in it.
