I use Granny Smith and Golden delicious.
I use a mandolin to get even slices. This sounds crazy but it’s
usually faster and easier than using a knife.

I will try this because I bet you are right. I'll have it out
anyways for the au gratin potatoes.
       I'm annoyed because I couldn't find pre-prepped brussels'.

Ohhhhh I’m not surprised those were out but what a bummer.
My parents went for last minute things this morning and said
their store was completely out of ham and had a sign out front
       “no ham.”
We don’t have ham at Thanksgiving but now of course we feel like
       one

       100% on the mandolin method.
Also, my mom also did a mix, and was partial to Winesaps,
Macouns, and Ida Reds. with Granny Smiths to round out if she
couldn't find enough good ones of the other varieties. She had
more of a taste for tart than I do, so the Ida Reds may be good
       for your mix.

This is exactly why Scritchy picked up a roast for us last week.
We're going tonight to get the things I need (a few sweet
potatoes, some marshmallows, whatever looks good in the way of a
       vegetable).

This does sound right up my alley. Never tried Ida red but if I
       see them maybe I will!

I go with granny Smith for pie apples when I can find enough. I
tend to do my Thanksgiving shopping way too late (I'm going
tonight. This is early for me.), so sometimes I have to make do
       with what I find.

were huge orchards of them out around Sebastopol, about 10 miles
to the west. And some of those orchards were closer to SR than
Sebastopol. We had plenty of apple pies made from Gravensteins.
But these days I would have to go with Granny Smith. I can't
       find Gravensteins anyway.

Trader Joe's used to have a gravenstein applesauce that was the
bomb. I wonder what happened to the orchards? I hope they
       weren't burned or somethign

I think the orchards were turned into vineyards. Some of them
were paved over/turned into houses. It's sad to think that the
orchards aren't as much of a money maker as grapes. :-(

Welp the apple selection at Wegman's was disappointing. I got a
mix of granny Smith, cortland, and Macintosh. It'll be good but
not spectacular. Also I am using storebought crust which I will
jazz up with a generous sprinkling of cinnamon sugar before
       baking.
How do you eat your apple pie? I like a slice of nice sharp
       cheddar to go with.
