There are great salad ideas here, even for those of us not
traveling. Thanks to MidwestMikkiJ for asking about salads, I
got some great ideas.
Also, kale and arugula are favorites of mine. And I have a copy
of Lab's brussels sprouts salad, I just don't have a mandolin so
cutting them with a knife is tedious. And I made a vegan entree
that was similar to Ani's carrots - but it also had lentils and
dried figs (I used dried apricots) along with the carrots and I
served it on a bed of wilted spinach leaves. I've made that one
several times, love those flavors.
I've never made the 7 layer salad, but have purchased it. Very
delicious.

Same here. I love salads and particularly like to make big ones
that are still good the second or even third day. Whatever I
decide for Christmas I’ll be making all of these or variations
of them. Right now I’m thinking the carrots and one of the
salads.

Here's another make-a-big-bowl for a couple of days salad I make
now and then. It's a little richer, so I liked that she cut the
mayo with some sour cream, though I go farther and use Greek
yogurt. Really good. Optional to blanch the broccoli or not
depending on cook's preference.

Red beets in raspberry vinegar. They can be made a day or so
ahead. Just be sure they're in a tightly sealed container or
everything will be hot pink. If the vinegar alone is too tart,
you can add a little sugar or raspberry puree.
