Chicken and Dumplings - shortcut

I adore the Smitten Kitchen "Chicken and Dumplings". Few things
make a cold day happier! It's the ultimate.
However, if you are pressed for time, my shortcut hack is simply
to use rotisserie chicken, and then the dumpling topping as in
the Smitten Kitchen recipe. It works like a charm in under 30
minutes, from start to steaming bowl. :) Use whatever
vegetables you please; I like carrots and Vidalia onions for the
sweetness but this is totally to personal taste.
1. Saute onions or leeks, along with several cloves of garlic
(to taste) in olive oil until onions are translucent.
2. Add carrots, sliced into disks - or whatever vegetables you
prefer. Let cook for several minutes to blend flavors.
3. Cut up rotisserie chicken into mouthful-size chunks.
4. Add 1 qt of chicken broth to the vegetables. Then add the
chicken chunks and return to low boil.
5. Make up the dumpling topping in the meantime. Add as golf
ball size dollops to broth, cover, and then simmer for 18
minutes. Ready to serve!
Dumpling mixture recipe:
Dumplings
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon table salt
1 cup whole milk
3 tablespoons reserved chicken fat (or unsalted butter)
For the dumplings: Stir the flour, baking powder, and salt
together. Microwave the milk and fat in a microwave-safe bowl on
high until just warm (do not over-heat), about 1 minute. Stir
the warmed milk mixture into the flour mixture with a wooden
spoon until incorporated and smooth. Drop by golfball size
balls into the top of the stew. Reduce heat, cover and simmer
15-18 minutes. Serve

I am going to try this. I googled and it seems gluten free
dumplings are entirely possible to make - I had no idea.

Looks great!
We get rotisserie chicken (from Costco, of course) fairly
regularly, and there's always too much chicken. Sometimes I
remember to freeze it while it's still fresh, but this looks
like a great way to use it up on a cold night. Or day at the
office.
