Simple Stuff

I’ve never enjoyed baking (except with my granddaughters of
course), but am in the mood for something fresh and Fall-ish.
Yesterday, I made a simple 9” round Pumpkin Chocolate Chip
Raisin Cake with a can of pumpkin, a bag of Betty Crocker
chocolate chip cookie mix, and lots of raisins. It was yummy
I’m going to do it again today but with two bags of the cookie
mix.
Later this week I’m going to try a rolled oats, can of apple pie
filling, and raisins thing.
I’d love any “mix, but don’t measure, these three or four things
together” suggestions.

The only things I've made that are that simple are no bake
cookies with oats and a couple other ingredients - and there are
a lot of recipes online for those.
When I was eating low carb years ago I made a simple desert for
myself that was just ricotta cheese, cocoa powder and a bit of
splenda (or other sweetener). It's like a chocolate pudding and
I made it in a tiny tea cup.
Or baked apples.
Back in the 1970s I made non bake "balls" with peanut butter,
powdered milk and whatever else you wanted - raisins, coconut,
chocolate chips. Many recipes for this type of treat are online.

eta: I have done a variation on this which used the graham
cracker crust, a slice of banana, and topped with a little bit
of brown sugar. But it's not really a "fresh, fall" kind of
thing. However, I can see doing this twist on it:
2 baking apples, sliced thin.
apple pie spice
in a glass pan, stir together apples and a small amount of apple
pie spice to coat the apples. Bake low and slow, adding water if
necessary to the pan until the apples soften. Use as topping for
graham cracker crust.

Twists on classics:
1 package jello of your preferred flavor
1 can of Dole mixed fruit (OR any fruit that you prefer. You can
use fresh fruit, but make sure that the jello is completely cool
but not yet set before adding.)
Make jello per package directions.
Chill jello for a half hour.
Drain and add the fruit. Stir to distribute. If it sinks to the
bottom, chill for another half hour and then stir again, and
then finish chilling until completely set.

Pudding Parfait Shots
2 flavors of pudding
whipped cream
Make the pudding.
Layer into shot glasses, and then top with a dollop of whipped
cream.
