       Herb & Butter Rice (with or without chicken)

       This is a recipe I created several years ago. It's easily
       adaptable if you prefer different herbs, more garlic, etc.
       3 tbsps butter
       2 cloves garlic
       1/4 cup paper-thin sliced onion
       3/4 cup white rice
       1 1/4 cups room-temperature water
       1 tsp tarragon
       1/2 to 1 tsp crushed rosemary
       1/2 tsp basil
       1/4 to 1/2 tsp salt (to taste)
       Makes: About 2 cups of finished rice
       
       Mince garlic. Melt butter over low heat. Increase to medium low,
       add garlic and onion, saute for 2 to 3 minutes. Increase heat to
       medium, add rice. Saute, stirring often, until some rice starts
       to brown. Add water, herbs, & salt. Bring to a boil. Reduce to
       low, cover, simmer for 20 minutes.
       For something that's more of a main dish than a side...
       Take 2 chicken breasts and boil until they fall off a fork
       fairly easily. Shred into small pieces. Set aside while you do
       the rest.
       Use chicken broth instead of water for the rice.
       Add the chicken to the rice when you add the water and herbs.
       I've also been known to add 1/2 - 1lb bag of frozen mixed
       veggies at the same time as the chicken.
