Autumn Apple Brownie

Technically, this is an apple cake - but it is so brownie-like
that calling it cake just seems wrong! This comes together in
about 10 minutes and is so easy that you'll make it with
whatever autumn fruits are on hand.
Autumn Apple Brownie
1 C flour
1/4 tsp baking soda
1/4 tsp salt
1/2 stick butter, softened
3/4 C sugar
1 tbl molasses (optional - but why wouldn't you? Or maple syrup)
1 tsp vanilla
1 tsp cinnamon
1 egg
2 apples
1. Preheat oven to 350 degrees.
2. In a medium bowl, combine all the wet ingredients (butter,
sugar, vanilla, egg, molasses). Add in dry ingredients (flour,
baking soda, salt, cinnamon). Mix - the batter will be very
stiff.
3. Dice the two apples, and add to the mixture.
4. Butter a 9 inch cake pan, or use parchment paper going
slightly up the sides. Bake for 40 minutes at 350. Let cool
slightly and cut into wedges to serve.
This works really, really well with butter pecan ice cream but
it is so rich and not at all dry that you don't need any ice
cream at all. :)
