I just noticed your location. Could the higher elevation be a
factor? Doesn't water boil at a lower temp?

I split a small pig with a friend a few weeks ago so I have some
pork roasts (among other things) in the freezer, and I decided
to try making a pork pot roast. My cookbooks are currently out
of reach while the kitchen is being painted, so I combined a
couple of online recipes.
I had a 3-lb butt roast, and I brushed a couple of Tbls of oil
onto the non-fat portion of roast, and combined 2 tsp salt, 2
tsp pepper, and 1 tsp each of onion powder, garlic powder, and
paprika, and patted that onto the roast. I'd set the oven to
450, and cooked the roast for half an hour at high heat, then
reduced the temp to 350 and cooked it for another hour. Then I
added a couple of onions, chopped, about 5 good-sized red
potatoes, cut in quarters, and about a lb of baby carrots,
poured about a cup of liquid over them, and cooked it all for
another hour. I had about a cup and a half of thick-sliced
mushrooms ready to add, and then I put the lid on the casserole
for a bit -- about half an hour, I think it was. I didn't think
to add any red wine, but I will, next time, and maybe drop some
rosemary into the cooking liquid.
I cooked it in a big glass casserole dish, not a Dutch oven, but
that's because the roast wouldn't fit comfortably into my Dutch
oven. It was pretty darned tasty -- tender and delicious.
Smelled wonderful, too!

In my home, my husband is the cook (I'm the baker). I think
he'd really enjoy a dutch oven - does anyone have a brand they'd
recommend?

I have a Loge and it is wonderful. Nowhere near as pricey as a
Le Crueset. I abuse the shit out of it and it's holding up
beautifully.

Lodge is great. I've heard that the Cuisinart brand is good.
I just picked up a Misen with the "grill pan" lid and it's a
fabulous larger addition to my old Le Creuset.

The Lodge prices seem pretty reasonable. Any particular
model/size/store you'd recommend? (I'm in MA/RI, if that helps)
