Pie crusts and cranberry strawberry filling is made, spice and
cream cheese frosting id done, I'll frost the cake tomorrow.
Sweet potatoes and green beans are prepped, leg of lamb is
butterflied and seasoned, and the bone is set aside for our
guest's dog. The bacon for the appetizer is partially cooked. I
need to clean the kitchen one last time, then I am going to have
a well deserved drink.

The last 2 years, we ordered the full meal from a local butcher,
and added salad and pies. This year we have a much smaller
group (6 adults and 1 toddler) so we ordered Mimi's "Turkey
Take Home Feast" from Mimi's Bistro-Bakery.
It has everything but rolls, and I'm making bread stuffing
because that's my favorite dish.

Cranberry/Pear Chutney with ginger and jalapeño is done as is
the are the sweet potatoes with Indian seasonings.
I’m also in charge I’d olives and some pickles. They are ready
to go but I forgot to bring the traditional dishes home from the
lake so I’m not sure what I’ll put it all in.

The pancit turned out nicely! Adding the oyster mushrooms was a
good idea.

I'm taking my first break since getting started this morning.
Having my first food too! It's about time to start the turkey.
The stuffing and sweet potato casserole are in the oven. The
stock looks really good. It's kind of a golden color. Mr was a
peach last night and strained it while I was napping!

Okay, the apple cake I made was EXCELLENT! I didn't make a
frosting but served it with a vanilla ice cream with a salted
caramel swirl. I'll post the link in recipes - while it had
eggs, it did not have wheat, butter or milk - so GF and dairy
free.
I highly recommend, even if you don't need GF cake.

The almond torte was a hit. I’ve made it before and people love
it.
I use almond flour to make it gluten free. Haven’t tried any of
the other gluten free flours.
I also use chopped almonds rather than sliced because we have
whole almonds at home and I don’t buy extra for this.
Would also recommend cutting the sugar a bit - it can be really
sweet. And since I don’t use salted butter, I add a pinch of
salt.

Here’s another variation. Some minor differences. Haven’t tried
this one but the only real difference is that it also uses
vanilla along with the almond extract.

This looks delicious! Do you just chop regular unsalted raw
almonds? Do they have to have those "skins" removed?
I'm thinking I will make this for New Years Eve.

I just chopped regular, whole, unsalted almonds. Although I had
some skinned ones and added those in also.
One torte can serve up to 12 people. I made 2 tortes for 10
people, and we didn't finish the first. But there was also a lot
of other desserts - 3 other pies and 2 types of cookies. My two
gluten free relatives split the untouched one.
I highly recommend it. Also recommend using the springform pan
rather than a cake pan. Both work fine for baking, but with the
springform, you can take it out and serve it on a nice plate.
It's pretty much impossible to get it out of the cake pan
without breaking it. I never tried using a deep pie plate,
although I should next time. If I remember.
