What's for Thanksgiving?
By: nsw11 Date: November 23, 2024, 7:15 pm

Anybody cooking anything interesting for Thanksgiving? We're
having starting with a chicken liver, bacon, and cherry tomato
appetizer, grilled leg of lamb, traditional sides (brussel
sprouts, mashed potatoes, roasted sweet potatoes, and cranberry
orange relish), with maple pecan pie, cranberry-strawberry pie,
and apple spice cake for dessert. Menu chosen so that Lil Sis
gets a chicken liver with bacon and our guest's dog gets a lamb
bone.

I have a smallish turkey which I plan to spatchcock and then dry
brine. I've never done either before, but it's just husband and
I so I will not be stressed nor have an audience for any
embarrassment, should there be...issues.
I'm planning an Indian spiced salt rub on the turkey, cranberry
chutney, and roasted sweet potatoes with some sort of spices
(but not hot spices.) Probably roasted broccoli and cauliflower
and a salad with arugula, lettuces, oranges and dried
cranberries. Possibly apple cake or apple something for
dessert.
Whether I roast the turkey in the oven or cook it outside on the
grill depends upon the weather. I'm not a fan of hopping in and
out of the house while also monitoring food in the oven -I'd
rather monitor the cooking while sitting in my living room chair
(which is strategically located relative to the kitchen.)
I do love turkey but I'm trying to avoid stuffing, mashed
potatoes and gravy this year in favor of change.

Sounds really good.
I've spatchcocked chicken before, which went really well, but
not turkey. I'd be curious to hear if the turkey adds any
difficulty due to size of bone or size of bird. I'd love to hear
how it goes.

We’re going to my sisters so it’ll be pretty much the regular
stuff - which I love.
I’m bringing sautéed sweet potatoes seasoned with Indian spices
and a cranberry and pear dish.

I work Thursday, so I make turkey and other regular stuff on
Friday.
I'm thinking about making the Brussels sprouts and apple salad
that was featured in WAPO today.

We're having the kids over. Son and DIL are on the hook for
green bean casserole and cranberries. Daughter is bringing Mac
and cheese. We're doing most everything else.
We're planning to cook the turkey something like spatchcock.
We're going to take it apart and cook the thighs and legs on a
different pan so we can cook them longer.
I picked up the chestnuts for the stuffing today. I'm hoping
Costco has fresh turkeys.
Two kinds of potatoes, mashed and sweet. Gravy and Greek salad.
For dessert egg-free cheesecake and pumpkin pie.
I have a special bottle of chardonnay from V Sattui.

I printed out that salad. I think Mr would love it. No immediate
plans to make it, though.
Cousin’s son and his wife are hosting again this year. They
asked me to bring creamed onions and dessert. Planning on my
butter cookies since the host loves them, lace cookies and some
kind of apple cake or tort. The last two will be gluten free. I
also have some cranberry orange relish left over from my office
pot luck, and the recipe claims it can stay in the fridge for 2
weeks, so I’ll bring that too.

I've roasted Brussel Sprouts a couple times in the last month. I
used a recipe I found on-line or maybe got from here. Mr. J even
said they tasted good this way which is more praise for them
than he's ever given.
All it is a sauce with maple syrup and a little dijon mustard.
And they are tossed with roasted walnuts and craisins. So simple
and yet so tasty. All done is 25 minutes or less.

The Kid is going to the boyfriend's house for Thanksgiving. I
was invited, but declined. They have a very big extended family
and I don't really enjoy going into a huge group of strangers.
I also don't really want to be driving home after dark. I'll
probably get some sliced turkey from the co-op or maybe some
Thai food. I'll see Kid for a bit on Sunday when I'm driving
them back to Bellingham.
