southern hash brown casserole

As requested in the Daily Thread by @HugeHug !! :)
8 slices of bacon or ham steak
32 ounces (2 lbs) hash browns
2 1/2 C sharp cheddar cheese, or mixture cheddar and Pepper Jack
6 eggs
8 ounces sour cream
1/2 to 3/4 C vidalia onion
1/2 to 3/4 C red or green pepper
1 cup milk
Preheat oven to 350 degrees
Fry bacon to crispy state. Saute onion and pepper in scant 1
tablespoon of the drippings.
Crumble the bacon. Stir together the hash browns, the bacon (or
ham if using!), the onion and pepper, 2 C of cheese, adding salt
and pepper to taste.
Place into 13 X 9 baking dish
Mix together the 6 eggs, sour cream and milk. Pour over the
hash browns and vegetable mixture. Cover with foil and bake for
40 minutes. Add a bit more cheese and uncover, baking for 10
more minutes. Remove and cool for 10 minutes before serving.
ETA: For reference, this is the closest link I can find to the
recipe I had based on what I recall making. I use it as a
baseline. This recipe does not contain the peppers, etc - but I
added them in.

ETA: Neither Mr. Hug nor I suffers from high cholesterol,
thankfully. 😅

Thank you for sharing! This recipe sounds delicious, and it
brings back fond memories. :)
My maternal aunt made a version of this potato dish, and we
called it "aunt's name's potatoes". Her version had no meat
(one cousin was a vegetarian) or red or green peppers, she used
cheddar and white cheddar cheeses and a whole lot of butter,
plus a healthy amount of fresh ground black pepper, and, I
think, a bit of nutmeg. All of us cousins would fight over who
got the largest used margarine tub-full of leftover potatoes to
take home after Thanksgiving and Christmas dinners. My aunt
made her potatoes for 54 people twice every season, and she
peeled and grated all of those potatoes by hand! I wish I could
still eat all of that dairy, her potatoes were so very tasty!
