       I despise pumpkin pie.  Hate it.  I do like pumpkin muffins and
       pumpkin bread.
       Coffee should never be pumpkinified, ew, gross, blechhh, ptooie.
       I like cinnamon and ginger and cloves but not in everything.
       Branch out, people!
       Also:  it's possible that pecan pie is a custard of sorts but It
       sure as heck doesn't act like one, so I refuse to think of it as
       custard.  It's sugar and butter and pecans with a little bit of
       egg for a binder, is all.

       Yes, I was prepared for that view. I think of pie as two
       categories - fruit or custard. Pecan is a bit of an outlier but
       fits best in the latter. And I did qualify calling it custard
       "style" not actually custard. But I admit it's not perfect. I
       suppose people who care for pie more than I do may categorize
       them more precisely.

       I usually have one pumpkin latte, on Halloween if I'm out and
       about, or Thanksgiving week if not on Halloween.
       But I humbly submit that the infinitely superior autumn beverage
       is the maple latte. A real maple latte made with real maple
       syrup, not maple flavored syrup. These are rare, and I may have
       an espresso machine just so I can make them myself since they're
       hard to come by in coffee shops.
       Okay. I have an espresso machine because I'm a coffee freak. But
       the rest of this post is true, I swear.

       I always thought of a pecan pie as being a chess pie with
       pecans.  LOTS of pecans.
       Chess pie is butter + sugar + eggs in a crust, occasionally with
       some flavoring like a little lemon juice -- a very simple recipe
       but it's a very rich, luxurious-tasting pie if you make it
       right.

       1) I really like pumpkin pie. It's just a custard with pumpkin
       and spices.  I do make my own these days with around 1/3 the
       sugar and much of that also maple syrup.  My recipe rarely uses
       pumpkin pie spice in it though-- not that it's bad, it's just
       that I don't usually use allspice in mine.
       2) I like it so much I made a savory pumpkin pie adapted from a
       greek recipe

       />  Cheese, onion, and mint.  that's basically it.  My SO loves
       this recipe, too.   I can't do phyllo (not g-free) so I just
       make this like a normal pie.
       3) I also cut up, roast and puree my own pumpkins for the
       season. Cheaper, and the flavor is lighter and less sweet (they
       usually mix pumpkin with sweeter hubbard squash) and less brown
       too.
       Pumpkin pie spice... well if you're talking about the actual
       spice mix, that is actually pretty close to Indian spices (which
       may also have black pepper, cardamom, cumin or a few other
       spices in also) and it makes a good chai spice base if you put
       in black pepper, too.  Maybe vanilla, for a more western sweet
       chai flavor.
       Right now I have a sweet garam masala I am using for tea
       instead, but I also like pumpkin pie spice chais.
       4) I do not buy anything "pumpkin spice." No processed food. No
       coffee, etc.  I bought a vial of pumpkin spice once, curious to
       see what it was like in liquid form. It smelled like Old Spice
       (or Newman's chai tea, ugh) so yuck.  No.
       Each to their own taste, but the traditional blend of sweet
       spices (pumpkin spice, apple pie spice, garam masala) is warming
       and helps stimulate your body heat for fall/winter.  So even if
       you don't like THAT precise blend, some sweet spices will do you
       good this season.

       Hm.  The pumpkin pie recipe that I creatively copied from the
       can of pumpkin doesn't call for allspice.

       Yes!  The pies of Thanksgiving are pumpkin, pecan, and a fruit -
       usually cranberry, as my mother really liked something tart to
       cut through all the sweet desserts.
