Atlantic Beach Pie

This dessert is meant to evoke the beach in summer: the crust
is the sand, the lemon, the briny ocean, and the whipped cream,
the ocean foam. It's from Bill Smith of Crook's Corner
Restaurant in Chapel Hill, NC. It was an amazing place, lauded
even in the NY Times. I loved everything there, esp the shrimp
and grits. With a heavy heart, I heard it closed in June 2021.
But the recipes remain.
Atlantic Beach Pie
Crust:
1 sleeve saltines (I use 3/4 sleeve or 30-40 crackers only,
YMMV)
4 tbs butter
3 tsp sugar
Filling:
14 ounce can of sweetened condensed milk
4 egg yolks
1/2 c lemon or lime
whipped cream for topping
Preheat oven to 350 degrees.
For the Crust:
Using your hands or a food processor, combine these ingredients
until crumbled. It doesn't have to be finely ground! Press
into pie pan. Bake for 15 minutes. But trust the use of
saltines; this works!
While the crust is baking, combine one 14 ounce can of sweetened
condensed milk, 4 egg yolks, and 1/2 cup of lemon or lime
juice. When the crust is done, pour the mixture into the pie
crust. Return to the oven to bake for 14-16 minutes or until
set.
Refrigerate when slightly cooled. The recipe says to allow for
4 hours in the fridge; less works too! When serving, top each
portion with whipped cream. It's cool and silky and perfect for
hot days.
