for quick, easy, vegetarian options for breakfast that are
       savory and not eggs.
       Got any ideas?
       [/quote]
I'm assuming specifically eggs rather than a substitute? I like
"scrambled" tofu especially in breakfast burritios. But if
that's a no-go, breakfast burritos with other ingredients (like
black beans, veggie sausage) are also delicious. But I admit,
I'm especially fond of Mexican for breakfast.
I know a lot of people who like savory oatmeal. Not for me, but
it apparently is for many. There are a lot of recipes online.
I have a recipe for the tofu scramble. I also have an America's
Test Kitchen recipe for Tofu Rancheros that I have not tried.
Sometimes their recipes are a little fussy for me, but they are
a good jumping off point for simplifying. Both are behind pay
walls, so let me know if you are interested.
eta: Just re-read. Maybe these are not so quick. Almond butter
or peanut butter on toast or English muffins are always good,
too. Quesadillas, grilled cheese, etc. Whole wheat muffins made
the night before without much sugar.

Thanks to my sister I have pretty much every ATK recipe ever
made, so I'll look those up.

Amazingly, just the other day we were talking about my
       grandfather’s standard breakfast:
Cottage cheese with grapefruit. Not quite savory, but not sweet
       either.
Savory…. Bagels come to mind. Especially with cream cheese. A
number of common flavored cream cheeses (which can also be used
with other things… flatbreads or celery, etc) are savory. Herb &
garlic, scallion, pimento green olive, vegetable.
Alternatively, a more savory bagel with plain cream cheese.
       Everything, Garlic, Onion, Asiago, etc.

How about hummus? I like plain or spinach. So easy to make, or
buy. I used to take it in to work for morning meetings and it
was a huge hit. High protein too.

I don't really care for hummus anymore, but I'll do something
similar with black beans, garlic and spices - sometimes with
       salsa added.
A toasted bagel, black bean spread and a slice of tomato & some
       greens is very tasty.

My favorite breakfast lately is this bread (plain sourdough)
  HTML https://slowrise.com/
       toasted with avocado, diced campari
       tomato, and everything-bagel-plus seasoning.
