That's a tall order. My vegan son rarely eats breakfast; when he
does, he chooses oatmeal.

I’m a dull breakfast eater. I’m happy with the same yogurt and
breakfast bar every day.
But I do love a good European style breakfast with good bread,
cheese, cucumber and tomato slices. Maybe a little fruit.

I am a boring breakfast person too. I eat oatmeal almost every
day, but I sometimes make tofu scrambles. I don't know if it
helps or not, but this is a good recipe:

I eat so much oatmeal, and if not, it's usually leftovers. I
don't think you were looking for cold pizza.
I once made a savory french toast, with basil, and everyone
liked it.
Cheese quesadillas, with or without added vegetables are quick
and easy.
ETA: oops, french toast is probably too eggy.

I am zero help, as I'm more of a steak and butter gal now.
When I was eating vegetarian, I ate baked and cooled sweet
potatoes a lot. They're pretty boring all by themselves, but it
never bothered me.

I'm assuming specifically eggs rather than a substitute? I like
"scrambled" tofu especially in breakfast burritios. But if
that's a no-go, breakfast burritos with other ingredients (like
black beans, veggie sausage) are also delicious. But I admit,
I'm especially fond of Mexican for breakfast.
I know a lot of people who like savory oatmeal. Not for me, but
it apparently is for many. There are a lot of recipes online.
I have a recipe for the tofu scramble. I also have an America's
Test Kitchen recipe for Tofu Rancheros that I have not tried.
Sometimes their recipes are a little fussy for me, but they are
a good jumping off point for simplifying. Both are behind pay
walls, so let me know if you are interested.
eta: Just re-read. Maybe these are not so quick. Almond butter
or peanut butter on toast or English muffins are always good,
too. Quesadillas, grilled cheese, etc. Whole wheat muffins made
the night before without much sugar.
eta2: I used to make miso soup for breakfast occasionally. At
its most basic, stir miso into water. I'm sure I did something
with veggies, too, but it's certainly flexible.

I used to cut them up and toss with orange segments for
breakfast. Great combo.

I'm not anti-egg, but when I want something savory the only
thing I can think of is eggs. And that gets boring, because
typically I don't want anything that's sweet.
