Balsamic Glazed Oyster Mushrooms – Shawarma Style

I bought some beautiful fresh oyster mushrooms today. :) Since
they are one of the few types of mushrooms I can eat, and I
haven't eaten any fresh mushrooms in a very long time, I am
excited to cook these up tonight. I will have tricolor quinoa
"pilaf" and steamed vegetables with the mushrooms.
This recipe sounds delicious, so I'm trying it out:

It is delicious! I had to modify around the garlic powder and
use some garlic infused oil instead, so my version has a more
subtle garlic flavor. With my right thumb and wrist still in a
brace with an aluminum splint inside, I didn't try to slice it
as described, I took the skewers out and used a cutting board to
make it easier.
Plus, I get to choose and make another dish with the rest of my
oyster mushroom haul today. :)
I can see using this spice/glaze combo on tofu as well, although
it may not "skewer" as well for this technique. I would lay out
strips of tofu and bake them on a cookie sheet instead.
