       Lima beans

I hate lima beans, well, I guess used to hate lima beans. I
have only ever grudgingly ate lima beans my entire life. The
taste of lima beans isn't offensive to me, it was always about
the texture. I don't like the tough skins and firmer, mealier
beans compared to thinner skinned and softer pinto beans. Of
course, the dwarf lima beans are softer and have thinner skins
than the big ones. I didn't know dwarf lima beans were a thing.
This is exciting for me because, of all of the types of beans,
lima beans are among the lowest in FODMAPs, and I now know I can
eat 1/2 cup serving without any issues. :)
I was intrigued enough to give dwarf lima beans a try after
reading the write up and recipe linked below. This quote hooked
       me:
"I decided to combine two of my purchases, baby lima beans and
okra, into a curry. While okra is a traditional ingredient in
Indian food, I don’t think that lima beans are. Nevertheless,
they worked well in this recipe, which turned out to taste
something like a gumbo with Indian seasonings."
       Recipe:

Very tasty with long grained brown rice, and that was made with
frozen dwarf lima beans, frozen okra, and substandard tomatoes.
I also substituted green onion tops for the white onion (damn
the aliums). It would be even better with fresh okra and
       tomatoes!

I’d make this for the aroma of all of those seasonings alone.

I also have an issue with iliums, didn’t know you did as well.
At least I can eat garlic in moderate amounts.
I have been thinking about cooking fava beans - to me they look
like large lima beans and I loved them in a Greek restaurant
       years ago.
Not really a lima bean or an okra fan. I can eat them but would
       rather eat something else.
