That looks lovely. I'll have to bookmark it for when I can chew

I made this salad today, and I am eating it right now. It is
very tasty, and probably already my new favorite salad to make
with cucumbers. It tastes like springtime in a bowl to me. I
loved the recipe as is (my only modification was using garlic
infused extra virgin olive oil instead of whole garlic). I also
loved it with a bit of crushed red pepper sprinkled on top,
because I put that shit on everything.

I’ve never heard of Persian cucumbers. Did you use them?

They are smaller with an unwaxed, more tender skin than regular
cucumbers. If your store doesn't carry them, an English cucumber
would be more similar than a regular one.

I bet that’s what I’ve gotten at the little neighborhood store.
I just thought they were smaller regular ones. But they had a
much softer skin.

I used English cucumber this time, but I get the little Persian
cucumbers when they are available at my Fred Meyer. The two
types are very similar in texture and flavor, thinner skinned
with smaller and softer seeds than the standard cucumber.
I will make this salad again! I want to use it to make a gluten
free pasta salad with marinated baked tofu made to taste sort of
cheesy. A bit of feta cheese would be an awesome addition to
this salad, but too much might overwhelm the flavor of the
fennel. Maybe a milder flavored chevre instead? I have dairy
envy. :)
