Such good news that some of the scary things have been
eliminated. Much mojo for both of you!
Mine has digestive issues without an official diagnosis (IBD is
a possibility according to the vet). It took some trial and
error but once we found the right food her symptoms improved
quite a bit. Jokes among my friends about how "all souls living
in this apartment must be required to have GI issues" are pretty
good.

Harmony had food intolerance/allergies but no IBD diagnosis
itself.
I was told to take her off chicken, fish and beef. Try either
duck, rabbit or venison. The goal was to get her on a protein
that she had never had before. There are a number of off the
shelf products out there.
The most successful in terms of taste was Natural Balance Duck
and Pea (dry). They universally hated the wet. When they
changed the kibble shape( and maybe the formula?) Her problems
started up again and we switched her to Instinct rabbit wet and
dry. We also tried other things but its tough to find things
without a second protein in the gravy. We had success with pork
and mussels in the gravy. She also liked the kangaroo but it
was discontinued. We tried frozen rabbit...universally hated.
The problem in my house ( and yours?) Was trying to feed the
other cat something different without Harmony getting into it.
I spent hours and probably added up to months while Frankie was
sick monitoring her while she ate. She did eventually learn to
let me know when she was hungry so I would get her food out.
Try out the expensive food. That is where I started and once we
figured out it was working they recommended some shelf brands
which is how I got to Natural Balance.

We adopted a senior kitty (15+) whose first official act was
puking. We loved her to bits!
We went through the novel protein diets (venison and green pea,
blech), made our own cat food, picked just the chicken legs out
of the Meow Mix.
Ultimately prednisolone was her savior.

Gilbert is gaining weight--yay. He's happily eating the
non-prescription limited-ingredient food we've been feeding him.
Oh, and I have good news about the outdoor cat, too. "Stormy"
got fixed, and his caretaker is letting him sleep inside. He'd
like Stormy to be an inside-only cat, but Stormy yowls to be let
outside, so...

Glad to hear Gilbert is gaining weight. Hope that keeps up
until he reaches his ideal weight.
Also happy to hear about the outdoor kitty. It's hard to switch
an outdoor cat to an indoor cat, but it's doable if you can ride
out the whining. Otherwise, maybe his caretaker would consider
putting in a cat run with access to the house. Stormy could
enjoy being outside, but safe in the run and could get back in
on his own terms.

I'll let Stormy's main caretaker decide how best to deal with
him. I've never met the guy; I just hear about our downstairs
neighbor's conversations with him about the cat.
I give Stormy scritches when I see him, and then let him be. Not
my cat, not my problem! (If he were mine, though, I'd train him
to be an inside cat.) I'm just glad he can no longer father
kittens.
