       I'm going to make this, maybe next week.  I've been told I don't
       eat enough protein, so I'll add something to it.  Tofu or
       chicken - or maybe some shrimps which I have in the freezer.
       When we were in India, the food in Kerala was my favorite.  I've
       made a beef and coconut dish that we ate there a number of times
       - It's so good.

       This was excellent!  I thought the broth tasted a bit thin so
       added a bit of veg soup base, and then a bit of chicken base.  I
       skipped the salt, waiting to see if I wanted to add the salty
       soup base.
       Of course I totally misread the recipe and so had to substitute
       a few things - no chili peppers so used pickled jalepenos.
       Always forget the difference between lime leaves and curry
       leaves and so used lime leaves, which is what I have.  And my
       cardamon pods were brown, not green.  And I skipped the onion,
       because I can't digest it.
       None of it mattered.  I added shrimp for protein.  Tofu or
       chicken would also have been good.  My peas & green beans were
       from the freezer.
       I think it's like a lot of stew recipes, it's very flexible.
       Next time I might add kale from the freezer or spinach.  Red
       peppers might be good.  Cashews would be good.  The potatoes
       were a bit extra considering the rice.  So maybe I'd use more
       veg and fewer potatoes.
       I don't know that this could go wrong no matter the
       substitutions.
       Edited to add that I think white beans might also be good in
       place of the other proteins mentioned above.  Not authentically
       Keralean, but good all the same.

       Good!  I am happy you enjoyed it.  Thanks for sharing this.  I
       am actually making this today.  I am happy to know it modifies
       well, because I will have to make a few changes too.
