Last night I made a variation on a favorite kale salad by
subbing walnuts for toasted pine nuts and adding turkey pieces I
had in the freezer. Except that I should have made a little
extra dressing and tossed the turkey in it ahead of time - I
always forget how dry turkey breast is - I thought it was great
and pretty filling. Husband, who is trying to cut down on sugar
and thought it was a great idea, was less impressed when he
actually ate it.
He said it was good but I noticed he made himself a peanut
butter sandwich later which is fine.
I’m happy because I mixed up tuna salad for sandwiches, made a
large citrus salad, have leftovers of the kale salad, and also
extended some broccoli coleslaw from a couple nights ago by
adding the remains of a head of cauliflower and some chopped up
Brussel sprouts. And I was planning to make a batch of turkey
soup today. So I shouldn’t need to cook for a few days and will
still have decent homemade foods to choose from.
