       The Shrimp

I love grilled veggies, but good fresh veggies on the grill
don't need much help. So, I will remember my pre-vegetarian
life for a minute or two. I prefer wet marinades for grilling,
dry rubs for slow cooking (like brisket).
This is a grilled Gulf shrimp recipe I cooked regularly while I
lived on the Gulf coast. I would buy the shrimp right off the
boat! My personal recipes are not usually very exact, so there
is a lot of wiggle room for modifications.
The Shrimp ( grilled shrimp scampi, sort of)
Peeled deveined large shrimp, preferably fresh but thawed frozen
       will do
Extra virgin olive oil, enough to coat the shrimp well
A whole lot of fresh garlic, peeled and run through a press (if
cooking several lbs, use the whole head of garlic)
A whole lot of crushed red pepper flake, more than you think is
       necessary
Sea salt (more can be added after cooking, just a little in the
       marinade will do)
Fresh Italian parsley, stems removed and finely chopped
Refrigerate and marinate for at least an hour but two is better
I used a veggie grilling tray rather than skewering the shrimp
Just before grilling, a splash or two of white wine (Sauvignon
       Blanc) or fresh lemon juice
       Grill until pink
Perfect to have with steaks on the grill. Even better cooked
over a Pecan wood fire than on a gas grill. Everyone loves
these shrimp. There were never leftovers.
I have a spicy Korean beef on the grill recipe too and my
barbecue chicken was also very popular. I could write those up
       if there is interest.
