Quinoa Salad

This was a big hit at my guild meeting.
1c quinoa
2c water
Rinse quinoa. Combine with water in pot. Bring to boil. Cover.
Reduce to simmer. Cook for 15 min or until all water is
absorbed. After cooked, let stand covered for 10 min. Fluff
with fork. Cool to room temps
Mix all of the below together then add cooled quinoa and mix
more.
2 tsp minced garlic
2 TB olive oil
2 tsp grated lemon zest
1/4 to 1/2 c lemon juice - to taste
1c diced cucumber peeled and seeded
15oz can of chick peas, drained
1TB fresh dill chopped
1/2 c golden raisins
1/2c chopped almonds or pecans
1/2c sliced green onions
1/2c diced carrots
1 1/2 tsp sea salt
1/8 to 1/4 tsp black pepper
It works well with substitutions. I've ditched the onions and
added celery. I've also used dried zest and dill at about 1/3 of
the fresh amount.

Funny! I made quinoa with dinner. Haven’t had it in ages.
Put a touch of chicken better than boullion in the water with
the quinoa. Didn’t rinse it - package didn’t say to. Sautéed
mushrooms, a little red onion, garlic in olive oil. Made a broth
with more better than bouillon, a touch of butter and added
broccoli, spinach, shrimp and scallops. It’s yummy.

Way back in the day (more than 12 years ago), you were advised
to rinse quinoa because it would taste bitter. And I did not
rinse it once back then and it was a mistake. More recently, I
have made the odd thing without rinsing it and haven't had any
bitter taste. Now that it's more popular, I wonder if they now
pre-rinse it all before packaging.
Your recipe sounds delish too.

Pre-rinsed used to be unusual and if it was, it was labeled
prominently as such. But I've noticed in recent years that Bob's
Red Mill pre-rinses all of its varieties and only notes it as
such in small letters. So, I think you are probably right that
most is pre-rinsed these days.
p.s. Grain salads - quinoa, tabbouleh, barley, etc. - are ALL
delicious. People want recipes because that is so.
