Christmas Cookies

I know it's early, I am finalizing what I'm baking this year
(the only way I can manage to get cookie trays out to people in
current circumstances is to premake and freeze some doughs in
advance). What are some ones you love to bake or would love to
receive in a cookie tin?
Right now, the plan includes:
chocolate gingerbread
almond brickle cookies
thumbprints (raspberry and peach)
hazelnut chocolate chip
maybe Swedish coconut
maybe snowballs
penuche fudge

Howdy! Nice to see you here. Excellent list, needs nothing
more IMHO. I used to get a lot of compliments on these, but I
added some roasted chopped pecans and a bit of orange extract to
the recipe.

Penuche fudge is one of my favorite sweets! A tin full of just
that is a fine idea in my book. :)

Now I want almond brickle cookies. Care to share your recipe?
My spritz/butter cookies are always popular, pretty easy, and
fast if you use a cookie press rather than rolling out the
dough. I've never frozen the dough, but I have frozen the
cookies. Happy to share the recipe if you're interested.

This, but the recipe used to call for buttering the flat bottom
of a glass and dipping it in sugar, then squashing each cookie a
but before baking. We do that but with a mix of red, green, and
white sanding sugars.
Used to do spritz, but I never had fun with the press part.
They're definitely an easy way to get some color on trays
though!

Thanks for the recipe.
In my younger days I'd roll out the dough and use cookie
cutters, and take a little time to decorate them with a
confectioners sugar glaze or royal icing, using a small artist
paint brush to apply different colors, etc. I just find it
easier to use the cookie press shapes now. I can double the
recipe and get them done, decorated, and everything cleaned in
1.5 hours. Less if I use colored sugars and skip the
confectioners glaze.

I always like snickerdoodles.
When Starbucks had a version with little toffee chips/morsels in
them, I got them every time went (weekly). I made a homemade
facsimile and they were excellent. Used Heath chips, if I'm
remembering right, and used maybe half a cup in a recipe. Now
I'm going to have to do that again soon.
