Tempeh, wha ?!
By: muskrat Date: September 12, 2023, 2:07 pm

So on my neverending (not always successful) quest to eat
healthy(er), I bought tempeh.
I'd heard of it, but never actually saw it IRL until now.
Readers, it does NOT look appetizing (and I say this as a tofu
lover).
I'll google recipes, but wouldnt mind suggestions from you folk
since I actually know you.

A tempeh question! *cracks knuckles*
It isn't as neutral in flavor as tofu, but it requires less prep
to use. My favorite tempeh recipe is for facon, and I usually
use it to make facon, avocado, tomato, and sprout sandwiches.
The facon burns easily though, so keep a close eye on it while
it bakes. I use a bit less maple syrup and I use 1/2 tsp Alder
wood smoked salt in place of the liquid smoke. I use the facon
any way I would have used bacon before going veg, and it will
keep in an air tight container for several days. I love it
diced up in fried rice or in egg or potato salad, or on a baked
sweet potato, you name it. It makes a mean facon Impossible
burger too.

When I don't want to go to this much trouble, I make vegan
Rueben sandwiches. I thinly slice and pan fry the tempeh in
olive oil with a bit of that Alder wood smoked salt and make the
sandwich with Wildbrine purple cabbage sauerkraut and homemade
thousand island dressing. With all of that flavor, the tempeh
just needs to be crispy and a bit smoky to make me happy. I
like it best with some caramelization around the edges.

I also add diced tempeh to stir fry and to pans of roasted
vegetables.
I am sure I am forgetting other tempeh uses. I will amend the
list if I remember something else.

I'm with Thetis - TLTs are my favorite. I can't lay my hands on
the recipe right now. But it's easy - some soy sauce, water, a
bit of liquid sweetener IIRC, garlic in a skillet. Cooks the
tempeh long enough to be done and then when all the liquid cooks
off - yummy.
I also would sometimes chop up the TLT pieces and mix with
onion, pickle, mayo (again I'll see if I can find the recipe)
for a sandwich spread.
I also tried this once, and it was good, too.

Ah, here it is:
Tempeh Sandwich Slices
1/c water
2 T low sodium soy or tamari
2 T sherry (optional. I omit)
1 t minced garlic *
1/2 t grated fresh ginger*
1 t coriander**
pinch cayenne**
1 t honey
8 ounces tempeh
Combine marinade ingredients; set aside. Slice tempeh.***
Lightly brown in a skillet on both sides. Pour marinade over
tempeh and cook until marinade evaporates.
*I doubt that I ever used fresh garlic or ginger. Powdered is
all I recall ever using.
**I don't remember using these ingredients ever. So, obviously,
it's very customizable.
***About 8 slices. Recipe says cut crosswise in half and then
slice each half into four layers. That results in squares. I
always cut all the slices crosswise for more of a bacon shape.
Dealer's choice.
Tempeh Sandwich Spread
Dice the above. Add:
4T mayo
2 T nutritional yeast (I think it would be fine to omit, since
most people don't keep it on hand.)
2 T chopped dill pickle
2 T minced parsley
1 t prepared mustard
1 t soy sauce (index card is splattered and faded. I think
that's what it says.)
1 stalk of celery, chopped
1/4 onion, chopped
