       Super Simple Non-dairy Veggie Dip

       This dip is tasty on rice crackers and English cucumber slices,
       and it is another way to sneak in more protein.  I wanted chips
       and dip today, and this is one of the two dips.
       Versatile, I can see making several different flavored
       dips/spreads using this as a base:
       Super Simple Non-dairy Veggie Dip
       (makes approximately 2 1/2 cups)
       12 oz firm silken tofu
       2 tablespoons extra virgin olive oil (I used low FODMAP garlic
       infused olive oil)
       2 teaspoons maple syrup (I only used 1 teaspoon)
       3 tablespoons fresh lemon juice (I used about half of this)
       1/2 teaspoon sea salt
       1/4 cup vegan mayonnaise (I used Vegenaise)
       1 1/2 teaspoons dried dill
       3 tablespoons chopped fresh chives + more for garnish
       2 tablespoons chopped fresh parsley
       pepper to taste (I used red pepper flake)
       Throw everything in a blender or food processor and puree until
       smooth.  Adjust seasonings to taste.
       Best if chilled a minimum of 3 hours to maximize flavor.
