       Another way to cook quinoa

       This isn't a recipe as much as it is a process and an idea. I
       got the idea from a reader comment on a recipe for a quinoa
       dish, it might have been food52. The commenter had been living
       in Peru for a number of years and wanted to share with us the
       local way of preparing quinoa.
       The idea is that you soak the quinoa for many hours before
       cooking it and then leave it refrigerated overnight, neither of
       which I have seen on any North American foodie site. The
       commenter claimed that this is a much more highly nutritious way
       to prepare it, so I gave it a try and have been doing it ever
       since.
       The process is: rinse the quinoa, soak it in plenty of water for
       6-8 (or more) hours, then drain it. Put it in a pot with water
       -- I have determined that for me, 1 2/3 cups water is just right
       for 1 cup of raw quinoa. I prefer white quinoa; it might be
       different with red quinoa. Add your preferred amount of salt,
       bring to a simmer, cover, turn the heat way down to maintain a
       low simmer, and it will be done in about 20 minutes. Turn off
       the heat, stir it with a fork, cover it again and let it sit for
       about 5 minutes on the turned-off burner.
       For best results, refrigerate it until the next day or longer.
       When first cooked it is very wet and not very appealing, but it
       finishes soaking in the liquid and firms up nicely, and has (I
       think) an excellent texture and taste the next day and later. I
       love having a container of it in my fridge, ready to use.

       Yep.  As far as I am concerned that's more quinoa for me.

       I forgot to mention the salt ... add your preferred amount to
       the quinoa when cooking it or stir it in at the end. It
       definitely needs some salt!
