Peanut Bitter Cookies

This question wasn't getting any traction in the get baked
thread. Moving it to it's own thread in hopes of getting some
suggestions. What's your favorite recipe for peanut butter
cookies? I'm craving them but haven't made them for years. My
waistline can't take trial and error.

What do you look for in a peanut butter cookie? Crispness?
Softness? Exploding peanut butter flavor?
I've had a couple of different recipes that I've used over the
years, based on what people are looking for in their cookies.

Peanut flavor is most important. Not too sweet. I like both
crisp ones and soft ones.

I would go with these, but skip the sugar sprinkle coating. In
my experience, flour levels really depend on humidity/height
elevation, so I start with 1 1/2 cups and then keep adding by a
1/4 or 1/2 cup depending on whether or not the dough still feels
too tacky. It shouldn't feel stiff before refrigerating, but it
shouldn't feel sticky/tacky like it won't come off your fingers
either.

This blog does a monthly cook-off. It can be a bit long, but
really compares and contrasts a bunch of recipes. I use this all
the time and it always works well.
The author is delightful, too.

One cup of sugar.
One cup of peanut butter, preferably Skippy but not the
peanuts-only type.
One egg.
That's all you need. 350F till they smell done. They won't rise,
they won't spread, they'll look coming out like they did going
in, so I tend to criss-cross them with a fork like the classic
look. The interior will be soft. If you want the exterior
crunchier than that, add a tablespoon of flour, and they'll also
hold together a bit better.
Most peanut butter cookies are more an aftertaste of peanut
butter and disappointing, but these are the real deal.
