       Vegan gluten free microwave cookie

       I am not sure if I am happy I tried this recipe, because now it
       is too easy to make a cookie I really like that my stomach can
       handle.  If I don't even have to preheat the oven, I lose a
       natural hurdle that often stops me from eating baked goods.  At
       least I only make one cookie instead of a dozen, right?
       I recommend almond butter over peanut butter, but both are
       tasty.  I didn't even add any chocolate chips and these cookies
       are still very satisfying.
