If I could make a really good curry dinner, that would likely be
my first choice for Christmas. It sounds more interesting to me
that roasted meat (no matter what meat). I have a couple of
Indian cookbooks and have made a few dishes, but somehow the
recipes tend to overwhelm me. I think I'll pull those cookbooks
out tomorrow and have a look.

Here's a gift link to a recipe on WaPo - Kale salad with squash
& pomegranate. It would be a beautiful dish for a festive meal.
I'm thinking about making it for Christmas, depending on what
else I decide to make.

Christmas Eve I did a London broil in a heavenly marinade. :)
Roasted potatoes, roasted carrots (see a warming theme here?)
and a ton of just-made Christmas cookies for dessert.
Christmas day I do a brunch for opening presents, etc. The oven
baked french toast with blueberry topping is waiting in the
fridge, becoming custard-like as it sits overnight. It gets
popped in the oven for half an hour and is a festive touch in
its own right. I'll make breakfast meats and fresh fruit salad
too. The afternoon is for making desserts for dinner. Pecan
pie and apple crisp.
Chinese take-out for dinner as we collapse with a good movie.

Our main celebration is Christmas Eve.
I made a butterflied leg of lamb (a very small one) that
marinated in spices for a day and then was grilled. It took
less than 30 minutes to cook. It's a favorite recipe of ours.
I just added a simple green salad, a lentil salad and roasted
potatoes. The lentil salad was the best part of the dinner, in
my opinion. I'd never made it before.
I didn't have have preserved lemon so used the grated rind
suggested. And since my store didn't carry dates, I used some
chopped dried apricots & unsweetened cranberries. Worked well.
I also wilted some spinach leaves and added them for color.

For my dinner, the leftover stuffed acorn squash from
Thanksgiving is thawing in the refrigerator. I may cook an
overeasy egg to go on top. For dessert, I will indulge in a
super sweet taco style ice cream sandwich made with gluten free
blueberry frozen waffles and salted caramel oat milk ice cream
with a bit of chopped up semisweet nondairy chocolate, toasted
coconut, and toasted sliced almonds.

We're focusing on breakfast:
Bacon, sausage, eggs, tomatoes, mushrooms. Think of a full
English vibe.
Also, English muffins, crumpets slathered with butter and
marmalade, and instead of my usual sweet rolls this year I'm
trying those Trader Joe's croissants you proof overnight:
almond, and chocolate.
Coffee and mimosas 'natch.
We're heading to SIL's for apps and dessert later. I'm bringing
a bûche de noél and some of those delightful little bites from
whole foods.

I'm thinking of farinata for breakfast since it's vegetarian and
easy.
For dinner I am going to repeat what I did for Thanksgiving
which is quinoa stuffed acorn squash by Cookie + Kate

Christmas lunch:
It was a wet and cold walk this morning. Comfort food - a
tempeh facon and fried egg sandwich with Vegenaise and Dijon
mustard on gluten free whole grain toast, and a side of spicy
baby bok choy, carrot, and green onion slaw. I also had a green
tea and two mandarin oranges.

So what's your New Year's Day menu? :)
Chocolate croissants and coffee to start the year on a sweet and
energizing note.
First main meal? We normally do full southern in honor of
spouse. Greens, black eyed peas, ham, biscuits, sweet potato
pie. Sadly, he had to leave early to be in place fpr 2 Jan. So
I may skip the black eyed peas but keep the rest. (Food allergy
person present).
And perhaps prosecco or Bellinis. Because why not? :)
