       I'll start this off with Tal's pimento cheese recipe, which I am
       gonna want to try eventually:
       🧀 Does all pimento cheese have mayonnaise? 🧀
       Mine has a smidge but it's optional, just enough to make
       hand-mixing easier.
       1 part x-sharp cheddar,
       1 part jalapeno jack,
       1 part cream cheese
       Diced pimento... 8 ounces for each 1.5 pounds of cheese
       seasoned with worcestershire, salt and black pepper
       dat's it
       (grate cheddar and jack, bring all cheese to room temp for easy
       mixing)

       This got started because I told Tal that I'd tried and failed to
       like pimento cheese and she thinks she can convert me.  Which,
       given my all-consuming love of cheese in general, is not
       unlikely.
       The pimento cheeses I've tried have all been downright slimy.

       I feel like the good stuff is all below the mason/dixon line.
       Tal needs to send you some of the good stuff.

       And the same goes for lobster rolls. They aren't anywhere near
       what you guys have up there.  Down here, they are so skimpy with
       the lobster and they are really dry.

       In case you want to experiment, here's my cousin's recipe:
       16 oz very sharp shredded cheddar cheese; room temp
       2-3 tsp of Dukes
       2 tbsp of chopped pimentos or Wickles (hot pickles)*
       A couple of dashes of pepper
       Combine all ingredients. The mixture will be very loose, so pack
       fairly tight and stash in the fridge for several hours or
       overnight.
       *I use 2-3 tbsp diced pickled chilis instead.

       That sounds yummy, Heddy.  The hot pickles will add a nice kick.
