       Projects to avoid doing my taxes

       I've decided to try my hand at canning - to give me plausible
       reasons why I can't yet dig up my tax paperwork, I suspect.
       Did these over 3 days -
       Nectarine Cardamom Preserves (slightly less than two 1/2 pints)
       Holiday Jam, which I tested last year but just did two half
       pints that I put straight in the fridge and didn't can. (Ten
       half pints)
       Red Cabbage Slaw, or so the Ball Blue Book titled it, though
       more mundanely, I'd say brined red cabbage. (6 pints)
       So, I'm feeling pretty accomplished despite the avoidance. And
       I'm all set if the grocery store runs out of red food.  :D

       I’ve thought about canning, did a little research and noped out
       if it. Need to get too many things they I don’t have room to
       store, and it’s just more process than I want to deal with.

       labors. 😁

       The nectarine sounds wonderful! Cardamom is my not-so-secret
       ingredient for elevating any jam. Star anise is brilliant too.

       Well, my hat is off to you!  Your jam sounds wonderful!
       I don't (and won't) can.  I grew up in a family that grew all
       our own produce.  I spent days in the kitchen with my mom,
       canning vegetables and making jam.  We had a huge chest freezer
       but canned everything else.  We also had access to abandoned
       farm orchards so we made all of our jam and jelly.  We made all
       of our pickles, catsup, a fair amount of our fruit juice, and
       every single vegetable we ate year round. Many evenings were
       spent sitting on the porch with a soup kettle full of green
       beans to snap or peas to shell.
       I do make refrigerator pickles.   And am very jealous of your
       jam - just not jealous enough to make some myself.

       Is there a looming red food shortage?  If so, I’ll add
       cranberries to my grocery list. Oh, and I haven’t had beets for
       a while, so those too. And maybe a red onion.

       My Mom didn’t can nearly as much as you describe.  But she did a
       fair amount of it, having grown up on a farm during the
       depression. I have little interest in doing it myself after
       helping her all those years.
