Garlic amounts in recipes

I found this interesting as I routinely go for more garlic than
a recipe calls for. I might go only a little over the first time
I make it but generally, I'll look at my cloves and go "these
are on the small side, they must mean more than this..."
Which is, of course, the other thing that probably makes judging
what to put in the recipe hard. No two garlic cloves are the
same size. Some of them not even approximately.
Are you faithful to the recipe or do you automatically increase
the amount of garlic you use?

I eyeball it and adjust. Old saying: no recipe requires one
clove of garlic, unless it's "how to prepare a single clove of
garlic" and even then that takes two.

When the amount of garlic or ginger seems excessive it’s just
right.

I also always add more than the recipe says, as I've never said,
wow, that's too much garlic.

I nearly always double, and frequently triple the spices.
Garlic, ginger, cumin, coriander, cardamom, chilis ... why are
recipe developers so damn stingy with flavor?

I go through a process similar to yours and judge the various
sizes and add more of the smaller ones, which ends up being more
than called for even though I usually make a recipe as directed
the first time. After that, I generally double the amount called
for. I really appreciate it when a recipe says how many
teaspoons it will be after mincing. But even then, I still use
more.

I got a "wow, that's too much garlic" once, back in my lifeguard
days.
What did I do in retaliation?
I sent a clove of garlic in the mail. To his work address. (No
return address, of course.)

I am in agreement with the general consensus that spice amounts
in recipes are often far less than I prefer. I've seen recipes
that call for a teaspoon of curry - which to me is akin to "why
bother?"
I hardly ever measure anything, and usually increase spice
amounts significantly - except for really hot spices which I
don't tolerate very well. I sometimes try to pay a bit of
attention to the ratio of the various spices called for in the
recipe, then just pour the spice into the palm of my hand and
eyeball how much I want. I would say I often increase spices by
at least a factor of 3.
Garlic is a little tricky - I can't eat onions at all and there
is also the same or similar chemical in garlic. So I am aware
of how much I'm using, but generally I still add more than a
recipe calls for.

LOL. You reminded me that I had a similar comment once in my
younger days. A friend set me up on a double date with her BF's
friend. She and I made spaghetti. My date said "You guys sure
like garlic". He was very attractive. But, nope, not a match.
:D
