Pasta gratinata

This is honestly a fairly involved recipe, so I only make it
maybe 2-3 times per year. But it's amazing comfort food and I
wish I could have it every day.
Fair warning: I measure with my heart. I'll try to be precise,
but no guarantees.
Ingredients:
For the bechamel - butter, flour, milk, salt, nutmeg
For the caramelized onions - ...onions. And melted butter or
olive oil. And salt.
For the actual recipe - Penne, bechamel, caramelized onions,
white wine, parmigiano reggiano, cracked black pepper
Step one: Make a bechamel, with a pinch of salt and some nutmeg
to taste

very good and will give you entirely too much bechamel, so be
sure to either scale down OR be prepared to drown everything
else you make for awhile in bechamel)
Step two: Caramelize some onions
(If you're impatient, like me, and hate doing this stovetop, do
it in your slow cooker

Step three: Preheat the oven to 350.
Step four: Cook some penne according to the package directions.
Step five: After draining the penne, heat some butter in a pan
on your stovetop. Add the penne, caramelized onions, and a
splash of white wine.
Step six: Spoon the bechamel on top (depending on how much pasta
you made, this could be anywhere from a few tbsps up to, like, a
cup), grate some parmigiano reggiano and black pepper on top,
and transfer to the oven. Cook at 350 for 25-30 minutes.
