I bought a couple of avocados 3 days ago thinking I'd make guac,
but changed my mind. Now I'd like to make avocado toast, which
I've read about but never had. What do you think, does it
require some tomato or is that too much like guac? Any good
ideas about avocado toast?
I'm just now baking another loaf of my good gluten-free bread so
I'll have a good basis for it.

I like my avocado toast simple: avocado, toast, salt. You can
dress it up if you want though.

I love sliced radishes on avocado toast. Or everything bagel
seasoning from TJ's. Or a runny egg if I'm feeling really
hungry.
Avocado toast is so versatile.

I like citrus with avocado.
My go-to avocado toast is topped with lemon juice and hot sauce.

I just mashed up half an avocado and then belatedly remembered I
had to toast the bread, so that is happening now. I intend to
just spread the mashed avocado over the bread and add some salt,
ie keep it really simple for the first time, and if it seems a
bit blah I could add a bit of lime juice.
So then, do you store the other half of the avocado in the
fridge or out on the counter? I have it in a plastic bag with
the pit left in it.

I leave the pit in and cover with plastic wrap, which is a
little pointless because you end up having to slice off the very
top bit of oxidized avocado on the next use anyways.
I mean, when I have leftover avocado that's what I do. It
doesn't happen very often. Usually I just eat it out of the
shell with a spoon.

PS, it was delicious. Now that I've had it just plain, maybe I
can fancy it up a bit with the other half, but that will be
tomorrow. (Half of it felt like a LOT of avocado to eat at one
time!)

Sometimes. Sometimes not. The risk when I refrigerate is that
I'll forget it exists.
