       I don't think the thick skin ever is not a problem.  You just
       get very soft beans with a thick skin.

       My rajma-ish cannellini beans are really good! But don't tell
       twosleevers (Urvashe Pitre), the very reliable food blogger
       whose recipe I'm using and slightly abusing. I only changed two
       things: cannellini instead of red kidney beans, and waaaay less
       cayenne than called for as we are heat weenies. Really nice
       flavor, creamy (but vegan), just generally very satisfactory.

       Two Sleever's Indian recipes are always reliable. Have you tried
       anything from Priya Krishna's Indian-ish? That's my other go-to.
       I find their recipes much more to my taste than the OG.

       I see that Indian-ish is a cookbook and not the name of her
       blog, in fact she apparently has no blog.
       I have some Indian cookbooks plus about 50 other cookbooks, none
       of which I crack open any more. I acquired them starting in 1965
       and up to about 10 years ago. Back then I was happy to spend an
       hour leafing through cookbooks, but all my recipes now come from
       google searches or from various publications' on-line food
       sections. I copy and paste them into Word docs.
       The ease and convenience of this method are so much greater than
       what I used to do that the thought of acquiring another cookbook
       makes my eyes roll. I just can't do that anymore.

       Totally understand! Quite a few of the recipes have been
       published by Bon Appetit, NYT, and a few other places. I just
       search by her name.

       wonderful-looking recipes that I want to try:
       Spinach with Feta Cooked Like Saag Paneer
       Chickpea Flour Green Beans
       Caramelized Onion (Urad) Dal
       I have everything needed for the 2nd two recipes. A neighbor
       just gave me about a pound of green beans from their garden, so
       that one would make sense to do first. Mmmm, new recipes, yum!

       I'll PM some other links tomorrow. I have the cookbook now
       because I cooked — and loved — everything I found online  :D
