Grill Me!

It's summer and it's too hot to cook inside.
What are your favorite ways to grill stuff? Marinades? Rubs?
Favorite ingredients? Bring 'em on!

I love grilled veggies - especially grilled sweet potatoes.
Toss them in olive oil, salt and pepper (sometimes Cajun spice
mix) and lay them on the hot hot hot grill. Flip them once.
You get lovely charred grill lines, and nice and tender inside.

I don't grill. It's just too much effort to carry everything
outside from the kitchen. And, nut that I am, I often use the
oven in August: twice this week (steak enchiladas on Tuesday and
bacon yesterday).

I have three go-to marinades:
- For chicken or pork: onion, sliced citrus such as lemon,
garlic, olive oil, salt, whatever fresh herbs look good, some
heat like red pepper flakes or minced habanero
- For beef: soy, olive oil, tons of garlic, lotsa chopped
parsley, maple syrup
- Vaguely Asian: Soy or Ponzu, sliced citrus, fresh ginger,
lemongrass, sesame oil, a little heat and a little sweet (sugar,
e.g), cilantro or thai basil
Sometimes I try for a vaguely Indian-ish flavor palette with
yogurt and garam masala and lime with lots of salt but this
isn't always successful.

Ooh! I love this prompt. We are getting a Kamado Joe (giant
ceramic grill/smoker thingy) delivered tomorrow and I am so
excited! I will confess my primary purpose is to use it to cook
pizzas, since the oven doesn't get hot enough to do stellar
pizza. Smoked turkey is also high on the list of exciting
things.

partner has a teriyaki kinda marinade that she will not give me
the recipe for, but is sofa king good on chicken. I only know
it's soy based and none of my business.

My favorite turkey brine is relatively basic - salt, sugar,
apple cider, allspice berries, peppercorns. Entering into the
world of ribs, brisket and pork butts will be a whole new world
to me

My problem is that I love teriyaki/soy-based marinades and can't
have soy sauce anymore. So all our favorite recipes no longer
work for me. :'(
That said, the lemon/olive oil/salt/herbs looks worth trying.
Maybe will experiment with that next summer when we have access
to an actual grill (as apt dwellers, we can only visit grills.
Some day we hope to leave apt-living in our rear-view mirror)

Have you tried tamari (it'd work if your soy sauce problem is a
gluten issue, if not, sorry. Food issues are a bummer)? Chinese
black vinegar is a fun way to go for non-soy based Asian-ish
marinades too
