The Recipe Thread
DIR By: Maggie Flannery
Date: June 19, 2012, 12:48 am
---------------------------------------------------------
Alrighty, We're always swapping recipes somehow so I thought I'd
start a thread to keep it all contained, haha. Maybe the guests
will enjoy some of these as well. P.S. I know I sometimes have
trouble getting buttermilk so I just use regular milk mixed with
a little lemon juice let it sit for a few minutes and then stir
and you'll be good to go. :)
Texas Sheet Cake w/ Chocolate Mocha Frosting
SHEET CAKE
2 cups Sugar
2 cups All-purpose flour
1 teaspoon Soda
1 teaspoon Cinnamon
1 cup Water
1/2 cup Butter or margarine
1/2 cup Vegetable oil
1/4 cup Cocoa
1/2 cup Buttermilk
1/3 of a cup of strong black coffee
2 Eggs, slightly beaten
1 teaspoon Vanilla
CHOCOLATE MOCHA FROSTING
6 tablespoons Butter or margarine
1/4 cup Cocoa
1/3 cup Strong coffee (1/3 cup milk may be substituted)
3 cups Confectioners sugar
1 teaspoon Vanilla
1 cup Chopped pecans (optional)
CAKE DIRECTIONS:
Sift sugar, flour, soda and cinnamon together into a large
mixing bowl. Set aside.
Combine water, butter or margarine, oil and cocoa in a small
saucepan and bring to a boil, stirring constantly. Watch
carefully so mixture does not scorch.
Pour over dry ingredients and mix well.
Combine buttermilk, eggs and vanilla and stir into chocolate
batter. Pour batter into a greased and floured 9 x 13 inch cake
pan.
Bake at 375 degrees for 25 minutes (slightly longer if using a
glass pan).
Start making Chocolate Mocha Frosting about 5 minutes before
cake is done.
FROSTING DIRECTIONS:
Combine butter or margarine, cocoa and coffee (or milk) in a
small saucepan and bring to a boil, stirring constantly. Stir in
confectioners sugar gradually. Add vanilla and pecans. Mix and
spread on the hot cake while it is still
in the pan.
Summer Pudding
Ingredients
2 pounds mixed berries—cherries, strawberries, raspberries, red
currants, black currants, blackberries, blueberries
1/2 cup water
1 teaspoon vanilla paste
11/2 cups sugar
8 slices dense white bread,
several days old
Sprigs of fresh mint, for garnish
Clotted cream
Preparation
1. Prepare the fruit by stoning and halving the
cherries, removing stems from the red and black currants, and
hulling and quartering the strawberries. Keep each type of fruit
separate at this stage.
2. In a large heavy-bottomed pan add the
cherries, water, vanilla paste, and sugar over a low heat, and
stir until the sugar dissolves. Let the cherries simmer until
they start to soften. Add the strawberries and blackberries and
stir; simmer 2 to 3 minutes, and then add the blueberries, red
currants, black currants, and finally the raspberries. Remove
from the heat, and carefully strain the fruit into a colander,
reserving the poaching syrup in a separate bowl.
3. Cut the crusts off the bread, and cut a
circle from 1 slice of the bread to fit the bottom of the
pudding basin. Dip the bread into the poaching syrup and place
it into a 1-quart pudding basin or soufflé dish. Cut all but 2
of the remaining 7 bread slices in half, dip them into the
syrup, and line the sides of the basin, overlapping each piece
slightly.
4. Once the basin is completely lined, spoon
the fruit into the center and fill the basin to the top. Place
the 2 remaining pieces of bread on top of the fruit. Place a
saucer that fits snugly inside the basin on top of the bread.
Weigh down the top of the pudding by placing something like a
large can of tomatoes on top of the saucer. Refrigerate 6 to 8
hours or overnight along with any remaining poaching syrup.
5. Run a spatula around the edges of the
pudding, and invert it onto a serving plate. Pour the remaining
syrup over the top, and allow the syrup to run down the sides.
Garnish with sprigs of mint and serve with the clotted cream.
Serves Six.

Thank you kindly for sharing this recipe and for starting a
recipe thread! I wouldn't have thought to do that, but I see how
it works given all the ingredients for those :D haha. I'll make
a note of them and give one a go at some point, possibly take a
few pictures as well to share with you if my efforts turn out
well. After the cakes I made the other day though, I know I have
a lot to learn, unfortunately. I never take the time to pay
close attention to recipe details, which is probably why it goes
wrong for me. I just take a quick glance and think I can do it
without help, I'll not be doing that anymore. Again, thank you
for sharing these! :)

Tom Cruise's To Die For Spaghetti Carbonara
DIR By: Maggie Flannery

I was looking for something completely different when I came
across this recipe, I thought you might enjoy it :D I skipped
the onions on this one, sorry Tom!
Yummy for the whole family! Copied from an appearance by Tom on
Oprah - easy!
INGREDIENTS
1/2 inch of olive oil (could use less)
2 cloves minced garlic (could use more!)
1 chopped onion
8 to 12 slices of Italian bacon
4 eggs
2 pkgs. spaghetti (I used one)
2 cups grated Parmesan cheese
DIRECTIONS
1 In a frying pan, combine 1/2 inch of olive oil, garlic, onion
and the Italian bacon cut into small squares. Let simmer or
about a half hour, being careful not to let the oil get to a
boiling point.
2 In a bowl, beat 4 eggs with lots of salt and fresh ground
pepper.
3 Bring a pan of salted water to boil. Cook spaghetti until al
dente, drain and immediately add egg mixture to pasta. The eggs
are actually cooked by the hot pasta. (Make sure the eggs are
thoroughly cooked before proceeding.) Stir the egg mixture until
well mixed. Pour in the mixture from the frying pan and stir.
Finish with the Parmesan cheese and serve!

I blame this entirely on the movie being on this afternoon...and
the family friend that stopped by and gave us a half bushel of
green tomatoes from her garden.
Fried Green Tomatoes ( Direct from the book to your table
;) )
Ingredients:
1 Medium green tomato (per person)
Salt
Pepper
Cornmeal
Bacon drippings ( about six or seven pieces depending on your
bacon )
Directions:
Slice tomatoes about 1/4 inch thick, season with salt and pepper
and then coat both sides with cornmeal.
In a large skillet, heat enough bacon drippings to coat the
bottom of the pan.
Fry tomatoes until lightly browned on both sides. Enjoy!

Ooh, I need to watch that again soon, it's one of my favourites.
And thank you kindly for sharing the recipe! I have yet to try
Fried Green Tomatoes, so that'll be quite a treat. I must
apologise for not having included any recipes on this forum or
your forum.. but I'm terrible at cooking and creating my own
dishes would only end up a disaster. Maybe one day, I'll give it
a try :D

Oh don't worry! I'm sure you'll become a great cook, my dear so
don't worry! I'm not a wonderful cook by any means, so I opt for
the easier less time consuming recipes. I've got to say though,
these are addicting and are best eaten while still hot. Someone
that does the channel programming must be a fan of the movie
because it's been playing nonstop for the past few days over
here. I love the movie and I couldn't help myself. I have faith
in you my dear! You can do it!

I got this one courtesy of the Sons Of Anarchy app. Nifty little
thing how they tie in big tough ass kicking bikers and cooking
of all things.
I'm so sorry I didn't convert this. I've lost my bookmarked
page for conversions.
"Chucky's Really Amazing Magical Fudge"
3 Cups Semisweet chocolate chips
1 (14 oz.) can of sweetened condensed milk
1/4 Cup butter
1 Cup chopped walnuts (optional)
- Place chocolate chips, sweetened condensed milk, and butter
into a large microwave safe bowl. Zap in microwave on high until
chips are melted (3-5 mins depending on your microwave) Stirring
once or twice during cooking. Stir in nuts.
- Pour into a well greased 8x8 inch baking dish. Put in fridge
until set.
